OK so a few thoughts here. First, congrats on who’s graduating! I have two kids graduating this year as well! Now your plan to cut the tenderloins in half, I would personally reconsider that. Why are you cutting them in half? Do you not have room to get all seven in there without cutting them? Pork tenderloins can dry out in the smoker if they are smoked a little too long, and cutting them in half I fear would increase the opportunity for them to dry out. If possible I would personally leave them whole. Next, you ask about the time it would take, and this is really hard to judge. Every smoker is different and some pork tenderloins can to be a little bit plumper than other ones so it is difficult to know exactly when they would be done. Do you have a digital thermometer? I would use that as your guide to know when they are done. That way when it reaches your desired internal temperature you know that it is done and the chance of them drying out is so minimal. First off, we, yes, you and I, have a lot in common! We both love using smokers to cook up some of the most tender, succulent, and mouth-watering BBQ around (of course, we will probably clash when it comes to whose BBQ is the best, but that is what a cook-off is for)! And, we too, like many of you, were once novices. But through years of hard work, a lot of eating, and research, we have molded ourselves into what we consider “Genuine Kings of the Grill!” Experimentation has led us to some of our favorite products on the market, and our goal is to help you find your best electric smoker as well, without all the trial and error we went through.
One of the disadvantages of using an electric smoker, however, is that it is very hard to get that traditional smoke ring (that pink layer of meat on the outside), even if you use a couple of charcoals or wood pellets. Now, this is not going to affect the taste of your meat, but nothing screams “Southern BBQ” like a good ol’ smoke ring!
If you are not watching it, you might miss seeing the smoke and therefore think that it’s not working, so make sure you remove the can within an hour or so to check on it. You can refill it as many times as you need to for the meat that you are smoking.
Before putting the meat to smoke, there is one thing you need to do to make sure you get a flavorful and delicious meal. Use a brine solution to soak meats such as chicken and turkey so that the poultry can get tons of flavor. You can mix salt with some seasonings and soak the food in and leave it overnight to rest.

I smoke brisket often with my electric. I start out at 170 for a few hours (starting around 9pm) with wood chips, then turn up to 195 (no more chips) until I get to aground 165-170 internal (normally around 7-8 in the morning), then wrap in foil with apple juice and take it up to 230 until internal is 200-205. Wrap it in towels and Throw it in the cooler for a couple hours. Ready by noonish.
Simple dial gauge for Rare, Medium & Well Done – colour coded (one for each steak/person), glow in the dark , stainless steel – it’s so simple it’s child play! Seriously – you can’t go wrong with this one! Dial face and pointer glow in the dark.
Many people still advocate soaking wood chips. Give it a shot and see if you like it. Wet chips can produce more smoke, but burn a lot more slowly, and getting them started can be a pain on occasions. A mix of wet and dry chips can be a good compromise.
